Bethmännchen
Makes around 40 biscuits
Ingredients:
– 75 g whole almonds
– 250 g raw marzipan
– 1 egg white
– 1 tablespoon flour
– 100g icing sugar
– 2 tablespoons sugar
– 2 tablespoons rose water
Method:
Chop the almonds in half lengthwise. Mix together the marzipan, egg white, flour and icing sugar to make a dough. Form around 40 small balls from the dough, and lay 3 almond halves on top of each one.
Lay the dough balls out on a tray covered with baking paper and allow to dry overnight at room temperature.
Heat the oven to 250°C and bake the dough balls for around 5 minutes until golden brown. Heat up the rosewater and sugar in a small pan, then coat the dough balls with it and leave to dry. Enjoy!
