Ingridients for ~2l of borshch:
1 lbm = 0.454 kg
1. Olive oil 2-3 Tbsp
2. Onion, big size 1 each
3. Potatoes, big size 1 each
4. White cabbage, minced 0.5 lbm
5. Garlic 2-3 cloves
6. Red beets peeled, grated 1 lbm
7. Canned tomatoes 1 can 250 ml
8. Pork ribs 1-2 lbm
9. Carrots, middle size 1-1.5 each
10. Red wine vinegar 3 Tbsp, better red wine 1 cup
Preparation:
1. Boil pork ribs in 2 l of water in a pot till the meat can be easily detached from bones, usually ~2 hours. When boiling meet prepare vegetables:
a. grate carrots and red beets
b. mince onions and potatoes
c. mince white cabbage
2. Detach meat from bones. Keep meet on a plate, press garlic over your meet. For further boiling of vegetables you only need broth.
3. Add minced onions and potatoes into broth and boil ~10 min. When boiling:
On a hot pan put some olive oil and fry grated carrots and red beets on middle heat ~3 min. Add red wine or vinegar, keep frying for 3 min and then put everything into the broth.
4. Add canned tomatoes and minced white cabbage into the broth, boil ~10 min
5. Add meat and salt, keep on low heat for 5 min
6. Refine with parsley, dill or leek
7. Serve with sour cream and baguette
