White chocolate mousse: (serves 6)

  • 2 1/4 cups (500 ml) heavy cream
  • 5 1/4 oz. (150 g) mini marshmallows
  • 9 oz. (250 g) white chocolate
  • 1 tablespoons vanilla extract or seeds from 1 vanilla bean
  • 3 1/2 tablespoons (50 g) butter
  • 1/4 cup (60 ml) water

Bring out everything you need. I use these marshmallows…

…and white chocolate buttons.

Put the butter into a pan and place on a medium heat. Add the white chocolate buttons.

Stir well until melted, then add the water.

Continue stirring until smooth.

Add the mini marshmallows.

Stir well…

Then add the vanilla extract.

Stir until the marshmallows have melted and the mixture is completely smooth,

Mmmmmm… looking delicious already!

Set aside, then whisk the cream in a separate bowl.

Don’t over-whisk the cream.

Pour the white chocolate mixture into the whipped cream, a little at a time.

Carefully fold it in, using a rubber spatula.

Done!

Divide the mousse between dessert bowls or cups.

Decorate with a little whipped cream on top, if you like, and a little fresh fruit.

This mousse can be served straightaway, or chilled until needed.
